Easy Peezy Chicken Breezy AND Mancakes

Ok, So there is probably not a recipe called that =) but this is my cheater chicken salad. My mom loved it, so it has to be good. lol

You start with as much chicken as you want, and if you don't have a salad shooter like me and you don't want to hand chop all the chicken and celery, you can us this: 
I call it my little chop chop. It's actually called a food chopper or something, but, Hey, I like to name my stuff =) Sue me lol
This is what it does:

It chops really good! I love it. Take a piece of chicken or a couple pieces of celery and this is what happens:

SO, back to recipe.
Easy Chicken Salad
2 pieces of boneless/skinless chicken breast (chopped finely)
2-4 pieces of celery (about 3-4 inches long) Chopped finely
Mayonnaise to taste (Enough to make mixture creamy)
Mustard (optional) to taste

NOW for the spread...Use any kind of bread you want. I just made this on Saturday and LOVED it. The Pesto Mayo that I used for the Chicken Sandwiches in my last post I used on these sandwiches. I have to say....I was bomb diggity! =)~

MANCAKES


You are probably wondering what that is. Well, Andrew and I were watching a documentary series of this guy going around the country and finding the best "pig out joints" across the nation. In one place he found Mancakes (A pancake on steroids)

I made this for Andrew the other morning:


You can laugh now. =) They filled the entire bottom of the pan and a pain in the ba-honkus to flip over.
I just had to share. I was so proud of myself for making them. There is two there, but the one on bottom is hidding. =)

Anticipation

WOW, changing your life around definitely makes a difference! in everything!

I am back on track and it's SO refeshing! Yesterday morning I had a great prayer meeting and this morning I had my Bible with me and I read Psalm 119....yes I know how long it is. =) It was rejuvinating. I really like Psalm 121. It is SO True! He is Most Definitely my help and keeper and he preserves my going out and comin in. I think this might become one of my favorite passages. =) Oh I can't wait until Sunday!
To be back in God's presence and worshipping with all those whom I love and who love and have been praying for me....Oh how awesome, loving, gracious, forgiving and so much more, God truly is!

Chicken Sandwiches W/ Pesto Mayo

So I made this yumm-diddly-umtious dish yesterday for dinner. It was so good!

The recipe called for roasted red peppers and provolone cheese, but I cheated and used fire roasted tomatoes and muenster cheese. =)~

I also used a shallow glass pie dish to cook the chicken. Here are some pictures:
Start with the bread of you choice. I chose Dutch Crunch Roll


Add the thinly sliced chicken

Add the tomatoes
or red peppers,
which ever you chose.

Put the cheese on top
& put in the oven to
melt the cheese & toast the bread

Take out of the oven put the pesto mayo on the top part of the bun....this is the type of pesto I used:
("Knorr"s)

AND EAT!!!! Yummy!

It was very scrumptious and very easy to make. Prep was a snap and I was doing stuff on the computer and other things while this was cooking. It goes great with a salad. I did a simple bag salad from Safeway with Ranch Dressing. (Oh and the "granulated garlic" is just garlic powder)

I'm Engaged!

So, this morning Andrew called my Dad and my Mom this afternoon.
When I got back from the store with stuff for dinner, he was standing with a bouquet of roses.
I went to go hug him, but he didn't let me....(you will know why in a minute)
He started by telling me something that he has told me before:
He's been frustrated for the past eight years watching his friends find their significant others and get married, often questioning God when it would be his turn. God would always tell him to just be patient. Then he (re)met me and fell in love, and he came to realize that I was the missing rose in the bouquet of his life. He then pulled the missing rose from the bouquet that he gave me and said "You are the missing rose in the bouquet of my life, you are my rose forever and ever. Will you marry me" (This is where him not letting me hug him comes in....the rose was in his back)
I was crying this entire time, as you can probably gather. =)
So now starts a journey of a life time. HAHA For those of you who know Andrew or his family, you will understand that. Andrew is one of the craziest people I know. He is SO goofy, never serious.....ok VERY rarely, and he is the most fun out of anyone I have ever known. Yet, he is kind and EXTREMELY patient with me, even though I drive him nuts sometimes (his words not mine), and most importantly is sensitive to God.
OH, I almost forgot the most important part! The picture of the roses! How could I forget? AND he brought me my favorite candy Hershey's Chocolate W/ Almonds (the King size x2)

The rose in the middle is the one he gave to me at the end =)
